Ingredients

  • 1/2 cup sliced black olives
  • 1/2 cup sliced pepperoni
  • 1/2 cup cubed mozzarella cheese
  • 1/4 cup sliced red onions
  • 1/4 cup roasted red peppers, chopped
  • 1/4 cup artichoke hearts, chopped
  • 2 cups mixed greens
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cherry tomatoes, black olives, pepperoni, mozzarella cheese, red onions, roasted red peppers, and artichoke hearts.
  2. Add mixed greens to the bowl.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, dried oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or chill for 15 minutes before serving.
