Ingredients

- 1 cup cherry tomatoes, halved
- 1/2 cup sliced black olives
- 1/2 cup sliced pepperoni
- 1/2 cup cubed mozzarella cheese
- 1/4 cup sliced red onions
- 1/4 cup roasted red peppers, chopped
- 1/4 cup artichoke hearts, chopped
- 2 cups mixed greens
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine cherry tomatoes, black olives, pepperoni, mozzarella cheese, red onions, roasted red peppers, and artichoke hearts.
- Add mixed greens to the bowl.
- In a small bowl, whisk together olive oil, balsamic vinegar, dried oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill for 15 minutes before serving.
Notes
- You can add salami or prosciutto for extra flavor.
- For a vegetarian version, omit the pepperoni and add more cheese or veggies.
- Store leftovers in an airtight container for up to 2 days.
