Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- In a separate bowl, whisk the milk, egg, and vanilla extract.
- Gently fold the wet ingredients into the dry mixture until just combined.
- Carefully fold in the blueberries, being careful not to crush them.
- Turn the dough onto a floured surface and shape it into a 1-inch thick circle.
- Cut into 8 wedges and place on the prepared baking sheet.
- Bake for 15-18 minutes, or until golden brown.
- Let cool slightly before serving.
