Ingredients

  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced red onion
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens.
  2. Slice cherry tomatoes in half and thinly slice red onion.
  3. In a large bowl, combine greens, tomatoes, red onion, feta cheese, cranberries, and walnuts.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.
  5. Drizzle the dressing over the salad and toss gently.
  6. Serve immediately.
