Ingredients

  • 2 lbs boneless, skinless chicken
  • 4 cups chicken broth
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf

Instructions

  1. Place chicken in the crockpot.
  2. Add carrots, celery, onion, and garlic.
  3. Pour in chicken broth.
  4. Season with thyme, rosemary, salt, pepper, and bay leaf.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. Remove chicken, shred it, and return to the pot.
  7. Discard the bay leaf before serving.

Notes

  • You can add noodles or rice during the last 30 minutes of cooking.
  • Store leftovers in an airtight container for up to 3 days.
