Ingredients

- 2 boneless, skinless chicken
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 cups cooked rice
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 tsp salt
- 1 tsp black pepper
- 1 lime, juiced
- Fresh cilantro (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and fully cooked, about 6-7 minutes per side. Remove and slice into strips.
- In the same skillet, add bell peppers and onion. Cook until softened, about 5 minutes.
- Sprinkle fajita seasoning, salt, and black pepper over the vegetables. Stir well.
- Add sliced chicken back to the skillet and mix with vegetables. Cook for another 2 minutes.
- Serve over cooked rice. Drizzle with lime juice and garnish with cilantro if desired.
Notes
- Use pre-cooked rice for faster preparation.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
