- 3 lbs chuck roast
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 cup beef broth
- 2 carrots, chopped
- 2 potatoes, diced
- 1 onion, sliced
Instructions
- Heat olive oil in a pan and sear the chuck roast on all sides until browned.
- Place the roast in the crockpot.
- Season with salt, pepper, garlic powder, onion powder, and thyme.
- Add beef broth, carrots, potatoes, and onions around the roast.
- Cover and cook on low for 8 hours or high for 4-5 hours.
- Remove the roast, shred or slice, and serve with vegetables.
Notes
- For extra flavor, add a splash of Worcestershire sauce.
- Let the roast rest for 10 minutes before slicing.
- Store leftovers in an airtight container for up to 3 days.
