- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Oil for frying
Instructions
- In a bowl, mix coconut, panko, salt, pepper, garlic powder, and paprika.
- In another bowl, whisk eggs.
- Place flour in a separate bowl.
- Coat shrimp in flour, then dip in eggs, and press into coconut mixture.
- Heat oil in a pan over medium heat.
- Fry shrimp for 2-3 minutes per side until golden brown.
- Drain on paper towels and serve warm.
Notes
- Use fresh or frozen shrimp, thawed if frozen.
- For extra crispiness, toast the coconut before coating.
- Serve with sweet chili sauce or mango salsa.
