- 1 pound large shrimp, peeled and deveined
- 1 cup shredded sweetened coconut
- 1/2 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Instructions
- Pat the shrimp dry with paper towels.
- Set up three bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with a mix of coconut and panko.
- Dredge each shrimp in the flour, dip in the egg, then coat with the coconut mixture.
- Heat oil in a pan to 350°F.
- Fry the shrimp for 2-3 minutes per side until golden brown.
- Drain on paper towels and serve immediately.
Notes
- Use sweetened coconut for better flavor and crispiness.
- Do not overcrowd the pan while frying.
- Serve with a dipping sauce like sweet chili or mango salsa.
