- 3 lbs chuck roast
- 1 onion, sliced
- 4 carrots, chopped
- 4 potatoes, cubed
- 2 cups beef broth
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried thyme
Instructions
- Place onions, carrots, and potatoes in the crock pot.
- Season the chuck roast with salt, pepper, garlic powder, and thyme.
- Place the roast on top of the vegetables.
- Pour beef broth over the roast.
- Cover and cook on low for 8 hours or high for 4-5 hours.
- Shred the meat and serve with vegetables.
Notes
- For extra flavor, sear the roast before adding it to the crock pot.
- Adjust seasoning to taste.
- Leftovers can be stored in the fridge for up to 3 days.
