- 4 boneless, skinless chicken
- 2 cups baby carrots
- 2 cups diced potatoes
- 1 cup chopped celery
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 cup chicken broth
Instructions
- Place chicken at the bottom of the crockpot.
- Add carrots, potatoes, celery, onion, and garlic on top.
- Sprinkle salt, pepper, and thyme over the ingredients.
- Pour chicken broth over everything.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Serve warm.

- You can substitute chicken thighs for if preferred.
- Add other vegetables like bell peppers or zucchini if desired.
