Ingredients

- 2 cups dried lima beans, soaked overnight
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Rinse and drain soaked lima beans.
- Add beans, broth, onion, carrots, celery, garlic, thyme, and bay leaf to the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours, until beans are tender.
- Remove bay leaf and season with salt and pepper.
- Serve warm.
Notes
- Soaking beans reduces cooking time.
- Add smoked paprika for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
