Description

Elote corn in a cup is a popular Mexican street food dish made with grilled or boiled corn kernels mixed with creamy, tangy, and spicy toppings.

Ingredients

Scale
  • 4 cups corn kernels (fresh or frozen)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1 lime, juiced
  • 1/4 cup chopped cilantro
  • Salt to taste

Instructions

  1. Cook corn kernels by grilling or boiling until tender. Drain well.
  2. In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
  3. Add cooked corn to the bowl and toss to coat evenly.
  4. Divide the mixture into serving cups.
  5. Sprinkle crumbled cotija cheese and chopped cilantro on top.
  6. Serve immediately with extra lime wedges if desired.

Notes

  • Use fresh corn for the best flavor, but frozen corn works too.
  • Adjust the spice level by adding more or less chili powder.
  • For a lighter version, substitute Greek yogurt for sour cream.
  • Store leftovers in the fridge for up to 2 days.
