Ingredients

- 2 lbs boneless, skinless chicken
- 1 cup low-sodium chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 cups chopped carrots
- 2 cups chopped celery
Instructions
- Place chicken at the bottom of the crockpot.
- Add chicken broth, onion, garlic, and spices.
- Layer carrots and celery on top.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken before serving.
Notes
- You can use frozen chicken, but increase cooking time by 1 hour.
- Add more vegetables like potatoes or bell peppers if desired.
- Store leftovers in an airtight container for up to 3 days.
