- 2 lbs pork shoulder, cut into chunks
- 1 cup chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
- 2 tbsp olive oil
Instructions
- Heat olive oil in a pan over medium heat and brown the pork chunks on all sides.
- Transfer the pork to the crockpot.
- Add diced onion, minced garlic, chicken broth, salt, black pepper, paprika, and thyme to the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the pork with forks and serve.
Notes
- For extra flavor, add 1 tbsp Worcestershire sauce.
- Serve with rice, mashed potatoes, or tortillas.
- Leftovers can be stored in the fridge for up to 3 days.
