Ingredients

  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 carrots, chopped
  • 3 potatoes, cubed
  • 1 onion, sliced
  • 2 cups beef broth

Instructions

  1. Preheat oven to 325°F.
  2. Season the beef with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  3. Heat olive oil in a large pot over medium-high heat. Sear the beef on all sides until browned.
  4. Add carrots, potatoes, and onions around the beef.
  5. Pour beef broth into the pot.
  6. Cover and roast in the oven for 3 hours or until the beef is tender.
  7. Remove from oven and let rest for 10 minutes before slicing.
