Ingredients

- 3 medium beets, boiled and peeled
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp vinegar
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Dice the boiled beets into small cubes.
- Mix the beets with chopped onion and minced garlic.
- Add olive oil, vinegar, salt, and pepper. Toss well.
- Let it sit for 15 minutes to marinate.
- Garnish with fresh parsley before serving.
Notes
- Boil the beets for 30-40 minutes until tender.
- For extra flavor, roast the beets instead of boiling.
- Store leftovers in the fridge for up to 3 days.
