- 1 tbsp vegetable oil
- 1 tbsp Thai red curry paste
- 1 can (13.5 oz) coconut milk
- 2 cups vegetable broth
- 1 tbsp fish sauce (or soy sauce for vegetarian)
- 1 tbsp brown sugar
- 12 frozen dumplings
- 1 cup sliced mushrooms
- 1 bell pepper, sliced
- 1 tbsp lime juice
- Fresh cilantro for garnish
Instructions
- Heat oil in a pot over medium heat. Add curry paste and stir for 1 minute.
- Pour in coconut milk and vegetable broth. Stir well.
- Add fish sauce and brown sugar. Bring to a simmer.
- Add dumplings, mushrooms, and bell pepper. Cook for 8-10 minutes until dumplings are tender.
- Stir in lime juice. Garnish with cilantro and serve hot.

- Adjust curry paste for more or less spice.
- Use any dumplings of your choice.
- Add more vegetables if desired.
