Ingredients

  • 1 whole chicken (34 lbs)
  • 1 cup feta cheese, crumbled
  • 4 cups water
  • 1/4 cup salt
  • 2 tbsp black pepper
  • 2 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 lemon, sliced
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, mix water, salt, black pepper, garlic, and oregano to make the brine.
  2. Submerge the chicken in the brine, cover, and refrigerate for 4-6 hours.
  3. Preheat oven to 375°F (190°C).
  4. Remove chicken from brine, pat dry, and rub with olive oil.
  5. Stuff the cavity with lemon slices and half the feta.
  6. Place chicken in a roasting pan and sprinkle remaining feta on top.
  7. Roast for 1 hour or until internal temperature reaches 165°F (74°C).
  8. Let rest for 10 minutes before carving.
