Description
A quick and healthy meal featuring garlic butter shrimp with a side of vegetable mash.
Ingredients

- 1 lb shrimp, peeled and deveined
- 2 tbsp butter
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups mixed vegetables (carrots, cauliflower, zucchini)
- 1 tbsp olive oil
- 1/4 tsp paprika
Instructions
- Heat olive oil in a pan over medium heat.
- Add mixed vegetables and cook for 5 minutes.
- Blend the cooked vegetables into a mash.
- In another pan, melt butter and sauté garlic for 1 minute.
- Add shrimp, salt, pepper, and paprika. Cook for 3 minutes.
- Serve shrimp over the veggie mash.
Notes
- Use fresh shrimp for best results.
- Adjust seasoning to taste.
