Description

A quick and healthy meal featuring garlic butter shrimp with a side of vegetable mash.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups mixed vegetables (carrots, cauliflower, zucchini)
  • 1 tbsp olive oil
  • 1/4 tsp paprika

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add mixed vegetables and cook for 5 minutes.
  3. Blend the cooked vegetables into a mash.
  4. In another pan, melt butter and sauté garlic for 1 minute.
  5. Add shrimp, salt, pepper, and paprika. Cook for 3 minutes.
  6. Serve shrimp over the veggie mash.
