- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 2 tbsp butter
- 6 medium carrots, peeled and sliced
- 1 tbsp honey
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Coat chicken breasts with the mixture.
- Place chicken on a baking sheet and roast for 25-30 minutes until fully cooked.
- Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with milk and butter.
- Toss carrots with honey, salt, and pepper. Roast alongside chicken for 20-25 minutes until tender.
- Serve chicken with mashed potatoes and roasted carrots.

- For extra creaminess, add more milk or butter to the mashed potatoes.
