Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tbsp butter
  • 6 medium carrots, peeled and sliced
  • 1 tbsp honey

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Coat chicken breasts with the mixture.
  3. Place chicken on a baking sheet and roast for 25-30 minutes until fully cooked.
  4. Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with milk and butter.
  5. Toss carrots with honey, salt, and pepper. Roast alongside chicken for 20-25 minutes until tender.
  6. Serve chicken with mashed potatoes and roasted carrots.
