Description
Filipino chicken stew cooked in coconut milk with squash
Ingredients
Scale
- 500g chicken, cut into serving pieces
- 2 cups kalabasa (squash), cubed
- 1 cup coconut milk
- 1 cup coconut cream
- 3 cloves garlic, minced
- 1 onion, sliced
- 2 tablespoons fish sauce
- 1 teaspoon black pepper
- 2 cups water
- 2 tablespoons cooking oil
Instructions
- Heat oil in a pot and sauté garlic and onion
- Add chicken and cook until lightly browned
- Pour water and bring to boil
- Add fish sauce and black pepper
- Simmer for 15 minutes
- Add squash and coconut milk
- Cook for 10 minutes
- Add coconut cream and simmer for 5 minutes
- Serve hot
Notes
- Use fresh coconut milk for best flavor
- Adjust fish sauce to taste
- Stir occasionally to prevent curdling
