Ingredients

- 2 medium eggplants, sliced
- 2 eggs
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- 2 tbsp cooking oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fish sauce (optional)
Instructions
- Heat oil in a pan over medium heat.
- Sauté garlic, onion, and tomato until softened.
- Add sliced eggplant and cook until tender.
- Season with salt, pepper, and fish sauce.

- Cook until eggs are set.
- Serve hot with rice.
