- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated parmesan cheese
- 1 tbsp butter
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt and pepper.
- Dredge chicken in flour, dip in beaten eggs, then coat with breadcrumbs mixed with parmesan.
- Heat olive oil in a skillet over medium heat. Cook chicken until golden, about 3-4 minutes per side.
- Transfer chicken to a baking sheet and bake for 15 minutes.
- In the same skillet, melt butter and sauté mushrooms until tender.
- Add garlic and cook for 1 minute.
- Pour in chicken broth and heavy cream, simmer for 5 minutes.
- Stir in parmesan cheese until melted.
- Spoon sauce over chicken, garnish with parsley, and serve.
Notes
- Use fresh mushrooms for best flavor.
- Adjust seasoning to taste.
- Serve with mashed potatoes or steamed vegetables.
