Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated parmesan cheese
  • 1 tbsp butter
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt and pepper.
  3. Dredge chicken in flour, dip in beaten eggs, then coat with breadcrumbs mixed with parmesan.
  4. Heat olive oil in a skillet over medium heat. Cook chicken until golden, about 3-4 minutes per side.
  5. Transfer chicken to a baking sheet and bake for 15 minutes.
  6. In the same skillet, melt butter and sauté mushrooms until tender.
  7. Add garlic and cook for 1 minute.
  8. Pour in chicken broth and heavy cream, simmer for 5 minutes.
  9. Stir in parmesan cheese until melted.
  10. Spoon sauce over chicken, garnish with parsley, and serve.
