- 1 cup uncooked white rice
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook rice according to package instructions.
- Cut chicken into bite-sized pieces and season with olive oil, oregano, salt, and pepper.
- Cook chicken in a skillet over medium heat until fully cooked (about 8 minutes).
- Make tzatziki by mixing yogurt, garlic, lemon juice, and half the diced cucumber.
- Assemble bowls with rice, chicken, tomatoes, onion, and remaining cucumber.
- Drizzle with tzatziki sauce and serve.
