- 1.5 lbs boneless, skinless chicken breast, cut into cubes
- 1/4 cup olive oil
- 3 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tbsp fresh dill, chopped
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp salt
- Wooden or metal skewers
Instructions
- In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add chicken cubes to the marinade, coat well, and refrigerate for at least 1 hour.
- Soak wooden skewers in water for 30 minutes if using.
- Thread marinated chicken onto skewers.
- Preheat grill or grill pan to medium-high heat.
- Grill skewers for 5-7 minutes per side until fully cooked.
- For the tzatziki sauce, mix Greek yogurt, grated cucumber, dill, minced garlic, lemon juice, and salt in a bowl.
- Serve chicken skewers with tzatziki sauce on the side.
Notes
- Marinate the chicken longer for more flavor (up to 4 hours).
- Drain excess liquid from grated cucumber to prevent a watery sauce.
- Use metal skewers for easier grilling.
