- 1 lb ground beef or lamb
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley, chopped
- 1/2 red onion, diced
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives
- 2 cups cooked rice or quinoa
- Tzatziki sauce for serving
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix ground meat, breadcrumbs, egg, garlic, oregano, cumin, salt, pepper, and parsley.
- Shape into 1-inch meatballs and place on a baking sheet.
- Bake for 18-20 minutes or until cooked through.
- While meatballs cook, prepare bowls with rice or quinoa as a base.
- Top with meatballs, red onion, cucumber, tomatoes, feta, and olives.
- Drizzle with tzatziki before serving.
Notes
- For crispier meatballs, broil for the last 2 minutes.
- Can use ground chicken or turkey for a lighter version.
- Make ahead: Meatballs keep for 3 days in the fridge or freeze for up to 3 months.
