  • 1/2 red onion, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives
  • 2 cups cooked rice or quinoa
  • Tzatziki sauce for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix ground meat, breadcrumbs, egg, garlic, oregano, cumin, salt, pepper, and parsley.
  3. Shape into 1-inch meatballs and place on a baking sheet.
  4. Bake for 18-20 minutes or until cooked through.
