Ingredients

- 2 boneless, skinless chicken
- 1 large sweet potato, diced
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 cup baby spinach
- 1/4 cup diced red onion
- 1/4 cup crumbled feta cheese
- 1 tbsp lemon juice
Instructions
- Preheat grill to medium-high heat.
- Toss sweet potato with olive oil, salt, and pepper.
- Grill chicken for 6-7 minutes per side.
- Roast sweet potato in the oven at 400°F for 20 minutes.
- Slice grilled chicken into strips.
- Assemble bowl with spinach, roasted sweet potato, chicken, red onion, and feta.
- Drizzle with lemon juice before serving.
Notes
- You can swap feta for goat cheese.
- Add avocado for extra creaminess.
