Ingredients

- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 egg
- 1/4 cup honey
- 1/4 cup unsweetened applesauce
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 cup grated apple (about 1 medium apple)
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a bowl, mix flour, oats, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk egg, honey, applesauce, milk, and vanilla.
- Combine wet and dry ingredients. Fold in grated apple.
- Divide batter into muffin cups. Bake for 18-20 minutes until golden.
- Let cool before serving.

- Store in an airtight container for up to 3 days.
- Freeze for longer storage.
