A hearty and healthy crockpot chicken chili recipe, perfect for a comforting meal.
Ingredients

- 1 lb boneless, skinless chicken
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup corn kernels (fresh or frozen)
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups low-sodium chicken broth
Instructions
- Place chicken at the bottom of the crockpot.
- Add black beans, kidney beans, diced tomatoes, corn, bell pepper, onion, and garlic.
- In a small bowl, mix chili powder, cumin, paprika, salt, and black pepper. Sprinkle over the ingredients.
- Pour chicken broth over everything.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken, shred with a fork, and return to the crockpot. Stir well.
- Serve warm, optionally topped with avocado, cilantro, or lime juice.
Notes
- For extra heat, add 1/2 tsp cayenne pepper.
- Store leftovers in an airtight container for up to 3 days.
- Freezes well for up to 3 months.
