Ingredients

  • 1 lb boneless, skinless chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn kernels (fresh or frozen)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups low-sodium chicken broth

Instructions

  1. Place chicken at the bottom of the crockpot.
  2. Add black beans, kidney beans, diced tomatoes, corn, bell pepper, onion, and garlic.
  3. In a small bowl, mix chili powder, cumin, paprika, salt, and black pepper. Sprinkle over the ingredients.
  4. Pour chicken broth over everything.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Remove chicken, shred with a fork, and return to the crockpot. Stir well.
  7. Serve warm, optionally topped with avocado, cilantro, or lime juice.

Notes

  • For extra heat, add 1/2 tsp cayenne pepper.
  • Store leftovers in an airtight container for up to 3 days.
