- 2 tbsp unsalted butter, melted
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix melted butter, olive oil, garlic, lemon juice, zest, oregano, salt, and pepper.
- Place cod fillets in a baking dish and pour the butter mixture over them.
- Bake for 12-15 minutes until the fish flakes easily with a fork.
- Garnish with fresh parsley before serving.

- Use fresh cod for best results.
- Adjust cooking time if fillets are thicker or thinner than 6 oz.
- Substitute dried parsley if fresh is unavailable.
