- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh spinach, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse quinoa under cold water and drain.
- In a saucepan, bring water or broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
- Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until softened.
- Add red bell pepper and cook for 3-4 minutes until tender.
- Stir in cherry tomatoes and spinach. Cook until spinach wilts.
- Fluff cooked quinoa with a fork and add it to the skillet. Mix well.
- Drizzle with lemon juice and season with salt and pepper.
- Sprinkle feta cheese and fresh parsley on top before serving.

- Use vegetable broth for extra flavor.
- For a vegan version, omit feta cheese or use a plant-based alternative.
