  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse quinoa under cold water and drain.
  2. In a saucepan, bring water or broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
  3. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until softened.
  4. Add red bell pepper and cook for 3-4 minutes until tender.
  5. Stir in cherry tomatoes and spinach. Cook until spinach wilts.
  6. Fluff cooked quinoa with a fork and add it to the skillet. Mix well.
  7. Drizzle with lemon juice and season with salt and pepper.
  8. Sprinkle feta cheese and fresh parsley on top before serving.
