- 2 cups long-grain white rice
- 4 cups chicken broth
- 1 lb smoked sausage, sliced
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 2 tbsp Cajun seasoning
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 2 tbsp vegetable oil
- Salt and black pepper to taste
Instructions
- Heat oil in a large pot over medium heat. Add sausage and cook until browned.
- Add onion, bell pepper, celery, and garlic. Cook until vegetables soften.
- Stir in rice, Cajun seasoning, paprika, and cayenne. Cook for 2 minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes.
- Remove from heat and let stand for 5 minutes. Fluff with a fork and serve.
Notes
- Adjust cayenne pepper to control spiciness.
- Use andouille sausage for authentic flavor.
- Leftovers refrigerate well for up to 3 days.
