Description

A hearty Dutch smoked sausage stew with potatoes, perfect for cold days.


Ingredients

  • 500g Hollandse rookworst (Dutch smoked sausage)
  • 500g potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 500ml beef or vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp mustard
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp butter or oil

Instructions

  1. Heat butter or oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Stir in tomato paste and mustard, cook for 1 minute.
  4. Add potatoes, carrots, and bay leaf, stir to coat.
  5. Pour in broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Slice the smoked sausage and add to the pot.
  8. Simmer for another 10 minutes until potatoes are tender.
  9. Season with salt and pepper.
  10. Remove bay leaf before serving.
