Description
A hearty Dutch smoked sausage stew with potatoes, perfect for cold days.
Ingredients

- 500g Hollandse rookworst (Dutch smoked sausage)
- 500g potatoes, peeled and diced
- 1 large onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 500ml beef or vegetable broth
- 2 tbsp tomato paste
- 1 tsp mustard
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp butter or oil
Instructions
- Heat butter or oil in a large pot over medium heat.
- Add onions and garlic, sauté until soft.
- Stir in tomato paste and mustard, cook for 1 minute.
- Add potatoes, carrots, and bay leaf, stir to coat.
- Pour in broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Slice the smoked sausage and add to the pot.
- Simmer for another 10 minutes until potatoes are tender.
- Season with salt and pepper.
- Remove bay leaf before serving.
Notes
- Use a good-quality smoked sausage for the best flavor.
- Adjust broth quantity for a thicker or thinner stew.
- Add other vegetables like leeks or celery if desired.
