Description

A fresh and crunchy broccoli salad with honeycrisp apples, nuts, and a light dressing.


Ingredients

  • 4 cups broccoli florets
  • 1 honeycrisp apple, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 1/4 cup Greek yogurt
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Chop broccoli into bite-sized pieces.
  2. Dice the honeycrisp apple and finely chop red onion.
  3. In a large bowl, combine broccoli, apple, red onion, cranberries, and sunflower seeds.
  4. In a small bowl, whisk Greek yogurt, honey, apple cider vinegar, salt, and pepper.
  5. Pour dressing over the salad and toss to coat.
  6. Chill for at least 30 minutes before serving.
