Description
A fresh and crunchy broccoli salad with honeycrisp apples, nuts, and a light dressing.
Ingredients

- 4 cups broccoli florets
- 1 honeycrisp apple, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup dried cranberries
- 1/4 cup sunflower seeds
- 1/4 cup Greek yogurt
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Chop broccoli into bite-sized pieces.
- Dice the honeycrisp apple and finely chop red onion.
- In a large bowl, combine broccoli, apple, red onion, cranberries, and sunflower seeds.
- In a small bowl, whisk Greek yogurt, honey, apple cider vinegar, salt, and pepper.
- Pour dressing over the salad and toss to coat.
- Chill for at least 30 minutes before serving.
Notes
- For extra crunch, add roasted almonds or walnuts.
- Store leftovers in an airtight container for up to 2 days.
