Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, butter, egg, and vanilla extract.
- In another bowl, combine flour, sugars, cinnamon, nutmeg, ginger, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing well.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until edges are lightly golden.
- Let cool before serving.
