Description
Spicy jalapeno popper egg rolls wrapped in crispy bacon, perfect for appetizers or snacks.
Ingredients

- 8 jalapeno peppers, seeded and halved lengthwise
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 tsp garlic powder
- 1/4 tsp smoked paprika
- 8 egg roll wrappers
- 8 slices bacon
- 1 tbsp water (for sealing wrappers)
Instructions
- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
- Mix cream cheese, cheddar, garlic powder, and paprika in bowl.
- Fill jalapeno halves with cheese mixture.
- Place stuffed jalapeno in center of egg roll wrapper.
- Brush edges with water, fold corners over jalapeno, roll tightly.
- Wrap each egg roll with bacon slice, securing ends.
- Place seam-side down on baking sheet.
- Bake 20-25 minutes until bacon is crispy and golden.
- Let cool 5 minutes before serving.
Notes
- Wear gloves when handling jalapenos
- Adjust spice level with more/less jalapeno seeds
- For crispier bacon, broil last 2 minutes
- Serve with ranch or sour cream for dipping
