- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup plain yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Heat oil in a pan and fry gnocchi until crispy, about 5-7 minutes.
- Let gnocchi cool slightly.
- In a bowl, mix yogurt, lemon juice, garlic, salt, and pepper.
- Combine gnocchi, tomatoes, cucumber, red onion, and parsley in a large bowl.
- Drizzle with yogurt dressing and toss gently.
