Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 24 oz marinara sauce
  • 6 cups chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned.
  3. Stir in onion, garlic, oregano, basil, and red pepper flakes. Cook for 3 minutes.
  4. Pour in marinara sauce and chicken broth. Bring to a boil.
  5. Add broken lasagna noodles and simmer for 10 minutes or until tender.
  6. In a bowl, mix ricotta and Parmesan cheese.
  7. Serve soup hot with a dollop of ricotta mixture and fresh basil.
