Ingredients

  • 1 leg of lamb (45 lbs)
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp rosemary, chopped
  • 1 tbsp thyme, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup chicken or vegetable broth
  • 1 onion, sliced
  • 2 carrots, chopped
  • 2 potatoes, cubed

Instructions

  1. Rub the leg of lamb with minced garlic, olive oil, rosemary, thyme, salt, and pepper.
  2. Place sliced onions at the bottom of the crockpot.
  3. Add the seasoned lamb on top of the onions.
  4. Pour broth around the lamb.
  5. Add carrots and potatoes around the lamb.
  6. Cover and cook on low for 8 hours or on high for 4-5 hours.
  7. Remove lamb, let it rest for 10 minutes before slicing.
  8. Serve with vegetables and juices.

Notes

  • Use a meat thermometer to check doneness (145°F for medium-rare).
  • For extra flavor, sear the lamb in a pan before slow cooking.
