A simple and delicious slow-cooked leg of lamb recipe perfect for a hearty meal.
Ingredients

- 1 leg of lamb (4–5 lbs)
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp rosemary, chopped
- 1 tbsp thyme, chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 cup chicken or vegetable broth
- 1 onion, sliced
- 2 carrots, chopped
- 2 potatoes, cubed
Instructions
- Rub the leg of lamb with minced garlic, olive oil, rosemary, thyme, salt, and pepper.
- Place sliced onions at the bottom of the crockpot.
- Add the seasoned lamb on top of the onions.
- Pour broth around the lamb.
- Add carrots and potatoes around the lamb.
- Cover and cook on low for 8 hours or on high for 4-5 hours.
- Remove lamb, let it rest for 10 minutes before slicing.
- Serve with vegetables and juices.
Notes
- Use a meat thermometer to check doneness (145°F for medium-rare).
- For extra flavor, sear the lamb in a pan before slow cooking.
- Leftovers make great sandwiches.
