- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 4 cups chicken broth
- 2 cups water
- 1 lemon, juiced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Add garlic and cook for 1 minute.
- Stir in chicken, salt, pepper, and thyme. Cook until chicken is no longer pink.
- Pour in chicken broth and water. Bring to a boil.
- Add orzo and cook for 8 minutes.
- Stir in lemon juice. Simmer for 2 minutes.
- Serve hot.
