Ingredients

- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- 1 avocado, sliced
Instructions
- Preheat oven to 400°F.
- Toss diced potatoes with olive oil, salt, pepper, and paprika.
- Spread potatoes on a baking sheet and roast for 25 minutes.
- Brown ground beef in a skillet over medium heat.
- Add taco seasoning and water as directed on the packet.
- Divide roasted potatoes into bowls.
- Top with seasoned beef, cheese, sour cream, cilantro, and avocado.
