- 4 boneless, skinless chicken
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup maple syrup
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix maple syrup, olive oil, Dijon mustard, garlic powder, smoked paprika, salt, and pepper.
- Coat chicken with half of the glaze and place them in a baking dish.
- Toss sweet potatoes with the remaining glaze and arrange them around the chicken.
- Bake for 25-30 minutes until chicken is cooked through and sweet potatoes are tender.
- Serve hot.
