- 4 salmon fillets (6 oz each)
- 2 tbsp olive oil
- 1/2 cup heavy cream
- 1/3 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1/4 cup grated parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Season salmon fillets with salt and pepper, then sear for 2-3 minutes per side. Remove and set aside.
- In the same skillet, add garlic, sun-dried tomatoes, basil, oregano, and red pepper flakes. Sauté for 1 minute.
- Pour in heavy cream and stir in parmesan cheese until melted.
- Return salmon to the skillet, spooning sauce over the fillets.
- Transfer skillet to the oven and bake for 8-10 minutes.
- Garnish with fresh parsley before serving.
