- 2 boneless, skinless chicken breasts
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives, pitted
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Season chicken with oregano, garlic powder, salt, and pepper.
- Heat olive oil in a pan over medium heat and cook chicken for 6-7 minutes per side until fully cooked. Let rest, then slice.
- In a bowl, combine quinoa, cherry tomatoes, cucumber, red onion, and olives.
- Top with sliced chicken and feta cheese.
- Drizzle with lemon juice and olive oil before serving.
