- 1 lb ground beef
- 1 tbsp olive oil
- 1 onion, diced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1 tbsp lemon juice
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook until browned, breaking it into crumbles.
- Add onion and bell pepper, stir-fry for 3 minutes.
- Stir in garlic, cumin, paprika, coriander, salt, and black pepper.
- Cook for 1 more minute until fragrant.
- Add cherry tomatoes and cook for 2 minutes.
- Remove from heat, stir in parsley and lemon juice.
- Serve warm.
