Instructions
- Preheat oven to 350°F (175°C). Grease a mini muffin pan.
- In a bowl, mix flour, sugar, baking powder, salt, and nutmeg.
- In another bowl, whisk milk, melted butter, vanilla, and egg.
- Combine wet and dry ingredients until just mixed.
- Spoon batter into muffin pan, filling each cup halfway.
- Bake for 10-12 minutes or until lightly golden.
- Cool slightly, then roll in powdered sugar.
Notes
- Do not overmix the batter to keep muffins tender.
- For extra flavor, add cinnamon to the powdered sugar coating.
- Store in an airtight container for up to 2 days.
