Description

A flavorful Moroccan-inspired cauliflower dish with a creamy tahini honey sauce.


Ingredients

Scale
  • 1 large cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper (optional)
  • Salt to taste
  • 1/4 cup tahini
  • 2 tbsp honey
  • 1 lemon, juiced
  • 2 tbsp water
  • 1 clove garlic, minced
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cauliflower florets with olive oil, cumin, paprika, turmeric, cayenne, and salt.
  3. Spread on a baking sheet and roast for 25-30 minutes until tender and slightly charred.
  4. While cauliflower roasts, whisk tahini, honey, lemon juice, water, and garlic in a bowl.
  5. Drizzle sauce over roasted cauliflower and garnish with parsley.
