Description
Nashville Hot Chicken features crispy fried chicken coated in a spicy cayenne paste. Serve it on a bun with pickles for a fiery meal.

- 2 lbs chicken thighs boneless skinless
- 2 cups buttermilk
- 2 cups all purpose flour
- 2 tbsp garlic powder
- 2 tbsp paprika
- 1 tsp black pepper
- 1 tsp salt
- 1 quart vegetable oil for frying
- 4 hamburger buns
- 1 cup dill pickle chips
- 3 tbsp cayenne pepper
- 2 tbsp brown sugar
- 1 cup lard or frying oil
Instructions
- Place chicken in a bowl with buttermilk. Cover and refrigerate for at least 2 hours.
- Mix flour garlic powder paprika pepper and salt in a shallow dish.
- Remove chicken from buttermilk. Dredge each piece in the flour mixture.
- Heat oil in a deep fryer to 350 degrees F.
- Fry chicken for 10 to 15 minutes until golden brown and cooked through.
- Drain chicken on a wire rack.
- Melt lard in a small pan. Stir in cayenne pepper and brown sugar.
- Brush the spicy oil mixture over the fried chicken.
- Place chicken on buns. Top with pickles and serve immediately.
Notes
- Wear gloves when handling the spicy oil.
- Adjust the amount of cayenne to control the heat level.
- Use a meat thermometer to ensure the chicken reaches 165 degrees F internally.
