- 1 cup granulated sugar
- 3 tbsp cornstarch
- 1/4 tsp salt
- 2 cups whole milk
- 3 large egg yolks
- 2 oz unsweetened chocolate, chopped
- 1 tbsp unsalted butter
- 1 tsp vanilla extract
- 3 large egg whites
- 1/4 tsp cream of tartar
- 6 tbsp granulated sugar (for meringue)
Instructions
- Preheat oven to 350°F.
- In a saucepan, mix sugar, cornstarch, and salt.
- Whisk in milk and egg yolks until smooth.
- Cook over medium heat, stirring constantly, until thickened.
- Remove from heat, add chocolate, butter, and vanilla. Stir until smooth.
- Pour filling into the pre-baked pie crust.
- Beat egg whites and cream of tartar until soft peaks form.
- Gradually add sugar, beating until stiff peaks form.
- Spread meringue over the pie, sealing to the edges.
- Bake for 12-15 minutes until meringue is golden brown.
- Cool completely before serving.
