- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced red onion
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together balsamic vinegar, olive oil, honey, garlic, thyme, salt, and pepper.
- Place chicken breasts in a large oven-safe skillet.
- Pour the balsamic mixture over the chicken, turning to coat evenly.
- Scatter cherry tomatoes and red onion around the chicken.
- Bake for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- Remove from oven and let rest for 5 minutes before serving.
Notes
- For a thicker sauce, simmer the pan juices on the stovetop for 2-3 minutes after baking.
- Serve with mashed potatoes or crusty bread to soak up the sauce.
